Fun Bakery - Coconut & yogurt muffin

I want to bake something relatively easy this morning so when I flipped my 800 pages baking book, I spotted this!!

Actually the recipe includes a frosting for the muffin but I just skipped it haha~

Ingredient (makes about 12 muffins):
- 2 cups all purpose flour
- 2 1/2 tsp baking powder
- 1/s tsp baking soda
- 1/4 tsp salt
- 1/2 cup (60g) shredded (desiccated) coconut
- 6 tbs butter
- 3/4 cup sugar
- 1/2 tsb vanilla extract
- 1 large egg
- 1 cup (250ml) plain yogurt

Direction:
- Preheat the oven to 180C
- Sift the flour, baking powder/soda and salt into a bowl. Stir in the coconut
- Beat the butter, sugar until creamy
- Add the egg, beating until just blended
- With mixer at low speed, gradually beat in the dry ingredients, alternating with the yogurt
- Spoon the batter evenly into the prepared cups, filling each about 3/4 full
- Bake for 20 mins or until toothpick inserted into a center comes out clean
- Cool muffins on the racks

The first batch is ready!
It takes only abt 1.5 hrs to get everything done, easy huh?
